Ingredients:

Directions:

  1. Cut (dice) bell pepper, onion, garlic, and avocado.
  2. Mince Cilantro
  3. In a salad bowl, combine peppers, onion, avocado, corn, garlic, and cilantro. Toss to mix.
  4. Add olive oil, vinegar, lime juice. Salt & Pepper to taste. Can also add cumin here if desired. Toss again.
  5. Add beans and mix well.
  6. Makes 4 large servings. Eat plain, with chips, in a tortilla, or on a salad. You can also add mango or pineapple to sweeten the mix if desired. (*Keep in mind this will effect the calorie count!)
