Ingredients:

Directions:

  1. Prep all ingredients.
  2. Saute onion with Oil in a frying pan, until starting to brown and soften.
  3. Stir in spices and saute one more minute.
  4. Stir in Peppers, Corn, Beans and Tomatoes until heated through. Set aside.
  5. Lightly grease frying pan.
  6. Place tortilla and cheese in pan, on Medium-Low heat.
  7. When cheese has begun to melt, spoon bean mixture onto one half of the tortilla and fold over. Heat on each side for 2 minutes.
  8. Slide onto plate, slice into 4 pieces, and enjoy!
