Ingredients:

Directions:

  1. Heat half the olive oil over low heat.
  2. Add the garlic and cook until well browned but not burnt.
  3. Add the thyme, beans, tomatoes then season lightly with salt and pepper.
  4. Cook on low heat, stirring as necessary to prevent sticking until the mixture has stopped boiling and started to fry, about 20 minutes.
  5. Finish seasoning the beans and add the rest of the oil and a good squirt of lemon juice.
  6. Serve as you see fit, with bread, on top of pasta as a light second course…
