Ingredients:

Directions:

  1. Cook barley per pkg directions
  2. The last 5 mins of cooking, stir in cherries
  3. Meanwhile toast walnuts in a skillet over med- high heat, stirring frequently and when aromatic, and remove and cool
  4. Whisk the orange juice and olive oil together.
  5. Stir in the scallions, cooked barley and toasted nuts
  6. Lastly stir in the cheese
  7. Salt and pepper to taste
