Ingredients:

  • 1 1/2 cups quick oats
  • 2 medium bananas
  • 1 1/2 cups soymilk
  • 2 tbsp vinegar
  • 1/2 cup molasses
  • 1/2 cup dates

Directions:

  1. Combine the flour with the dates, and baking soda. make a well in the center.
  2. Combine the oats with the soymilk and let soak a little while. stir in the mashed banana, vinegar, and molasses and add to the dry ingredients.
  3. Lightly mix.
  4. Evenly spoon into muffin tins sprayed with nonstick spray.
  5. Bake at 375 degrees for about 25 minutes, until tops bounce back when pressed lightly
