Baked Potato Soup with Onions

Ingredients:

  • 1 large potato
  • 2 medium slices of bacon
  • 1/4 cup butter
  • 2 cups 2% milk
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Preheat oven to 400 degrees, place potato in oven for 40 minutes. Remove from oven and cube. Remove skin if you do not like the skin.
  2. Cook bacon and drain and set aside.
  3. In large pot melt butter
  4. Add milk and whisk in Flour
  5. Stir constantly until it thickens
  6. Add all remaining ingredients except cheese.
  7. Cook on medium-low to low, stirring occasionally for 20 minutes.
  8. Mix in cheese or serve and garnish with cheese.
