Ingredients:

Directions:

  1. Wash and trim ends off the cucumber, no need to peel.
  2. Cut cucumber into thirds.
  3. Chop 2/3 and dice 1/3 of cucumber (diced will be for garnish).
  4. Cut avocado in half and remove pit and skin.
  5. Chop green onions into 1 pieces.
  6. Add chopped cucumber, avocado, green onions and mint to blender.
  7. Pour in buttermilk and water (plain yogurt or sour cream can be substituted for buttermilk).
  8. Blend until smooth, about 2 minutes.
  9. Season with salt and pepper.
  10. Chill for up to 3 hours before serving.
  11. Garnish with diced cucumber.
