Asparagus Salad

Ingredients:

  • 1 lb fresh asparagus 1 inch of the bottoms trimmed off
  • 1 medium red onion sliced thin
  • 1/4 cup of greek olive oil
  • this requires no seasoning but to each their own.
  • i also use tomatoes when in season

Directions:

  1. Lay asparagus out after washing and with a knife cut the entire bunch into thirds.
  2. Bring a pot with 4 cups of water to a boil
  3. Add the lower part of the asparagus first to the pot of boiling water and wait 30 seconds.
  4. Add the middle bunch to the pan and wait another 30 seconds.
  5. Add the tops to the pan of boiling water and wait 30 seconds.
  6. Drain in a colander and run under cold water to stop the cooking process ( or shock them in an ice water bath)
  7. Set aside in the colander and allow to drain.
  8. In a nice dish add the aparagus, onion and olives along with the balsamic and olive oil and toss with hands.
  9. Add the feta and toss a few times.
