Apple Craisin Lettuce Salad

Ingredients:

  • 2 package. lettuce ( romaine and spring greens etc.)
  • 1 package. or 1 1/2 cups craisins
  • 1 1/2 cups cashew pieces
  • 1 large apple chopped
  • 1/2 cup sugar
  • 1/3 cup lemon juice
  • 1/2 tsp. salt
  • 2/3 cup olive oil
  • 1 tsp. poppy seed

Directions:

  1. Place dressing ingredients into a container.
  2. Shake well to combine.
  3. Salad:
  4. Chop apple.
  5. Store in plastic bag with some lemon juice (additional amount from mentioned above-this helps keep the apple from turning brown)
  6. Measure the rest of the ingredients.
  7. DO NOT PUT TOGETHER UNTIL READY TO SERVE!
  8. Combine Salad ingredients.
  9. Drizzle dressing over and toss.
  10. Other variations include but are not limited to:
  11. Strawberries, mandarin oranges, grapes, sunflower seeds, different kinds of cheeses, different kinds of dried fruit, left over chicken chopped etc.
