Zucchini Salad With Poppy Seed Vinaigrette

Ingredients:

  • 2 1/2 tbsp balsamic or red wine vinegar
  • 2 tbsp orange juice
  • 1 tbsp poppy seeds
  • 1 tsp sugar
  • 1/2 tsp dry mustard
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 8 medium zucchini , halved lengthwise, thinly sliced crosswise

Directions:

  1. Whisk first 6 ingredients in a small bowl. Gradually whisk in oil.
  2. Mix in scallions. (Dressing can be prepared up to 1 day early.)
  3. Put zucchini slices in a large bowl and toss with enough dressing to coat.
