Ingredients:

Directions:

  1. Place zucchini, chopped peppers, and onions in a large container. Cover with crushed ice and let set for 3 hours.
  2. In a large pot, place remaining ingredients and bring to a boil. Drain the vegetables well and add to the pot. Bring to a boil again.
  3. Ladle vegetables into wide mouth jars that have been cleaned and are hot. Seal and process in hot water bath.
