Zucchini Pancakes

Ingredients:

  • 3 eggs
  • 3 tblsp flour
  • pinch of garlic powder
  • salt and pepper to taste

Directions:

  1. Drain the grated zucchini and mix with the remaining ingredients.
  2. If the mixture looks too liquid, add more flour.
  3. Drop on hot, oiled griddle and cook until browned.
  4. Turn and brown pancakes on the other side.
