Ingredients:

  • 2 cups flour
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 cup oil
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 1 (1 lb) box dried pitted prunes (or plums)
  • 1/2 cup butter
  • 1 cup sugar
  • 1/2 cup buttermilk
  • 1/2 tsp vanilla
  • 1/4 tsp baking soda
  • 1 cup nuts (optional)

Directions:

  1. Preheat oven to 350 degrees. Place prunes in pot with 1/4 cup water. Cook until prunes are soft but not mushy. Drain water and slightly mash the prunes into small chunks.
  2. Place all ingredients including prunes in a mixing bowl and beat until ingredients are combined. Pour batter into an ungreased 9-by-13-inch pan.
  3. Bake for about 40 minutes or until cake tester comes out clean. Remove cake from oven and, with the tines of a fork, poke holes in the cake.
  4. For the cake sauce, combine butter, sugar, buttermilk and vanilla and bring to a boil. Remove from heat; add the baking soda and stir. At this point you may add the nuts (optional).
  5. Pour the sauce over the cake (you can make some holes with a fork first). Let cake sit and cool before cutting.
