Grandma's Oatmeal Cookies

Ingredients:

  • 1 cup shortening or 1 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 2 tbsp vanilla
  • 1 1/2 cups flour
  • 1 tsp salt
  • 3 cups chopped nuts
  • 3 cups quick oats
  • 1 cup raisins

Directions:

  1. Preheat oven to 350 degrees.
  2. Cream shortening or margarine and sugars.
  3. Mix in eggs and vanilla.
  4. Sift flour, salt, and soda, and fold into creamed mixture. (I like to plump my raisins before adding them. If you do, do not sift the flour.).
  5. Fold in oats, nuts, raisins, and coconut.
  6. Drop by spoonful or scoop onto cookie sheet.
  7. Bake for 8-10 minutes or until golden brown.
