Wild Rice Soup

Ingredients:

  • 6 tbsp butter
  • 1/2 cup flour
  • 1/2 tsp salt
  • 2 tbsp dry sherry
  • 1/3 cup ham, minced
  • 3 tbsp slivered almonds

Directions:

  1. Melt the butter in a saucepan, and saute the onions until they are tender.
  2. Blend in the flour.
  3. Slowly stir in the broth.
  4. Cook on med-high heat, stirring constantly until the mixture comes to a boil.
  5. Boil and stir for 1 minute.
  6. Add the wild rice, salt, ham, carrots and almonds.
  7. Simmer 5 minutes.
  8. Blend in the half and half and the sherry and heat.
  9. Serve Hot.
