Directions:

  1. Combine watermelon, red onion, vinegars, canola oil, basil and parsley in a blender or food processor.
  2. Pulse on and off about 30 seconds until combined.
  3. Add salt and pepper.
  4. Serve over boston or bibb lettuce greens,
  5. Great additions to the salad greens would be watermelon balls and/or strawberry slices, sprinkled over all with crumbled feta.
  6. There is something magical about balsamic vinegar and black pepper over watermelon or ripe strawberries.
  7. This dressing makes a salad sing.
