Directions:

  1. Soak beans overnight.
  2. Cook beans until tender, drain.
  3. Make roux.
  4. Using 2 Tbsp.
  5. Oil, brown the flour until dark brown.
  6. Dice onion and bell pepper.
  7. Saute onion and pepper until onion is golden.
  8. Add all ingredients to casserole dish.
  9. Bake 45 min.
  10. 350 F.
