Tuna Cakes in a Muffin Pan

Ingredients:

Directions:

  1. Boil or microwave potatoes til soft and mash. Leave to cool til warm.
  2. Boil tuna in the water til cooked through. Flake fish and add with the water to potatoes.
  3. Add spring onion, mayonnaise, ricotta cheese, fish sauce, Old Bay and pepper and mix well together.
  4. Mix in beaten eggs. This will make the mixture very soft.
  5. Spoon into a greased muffin pan, filling to the top.
  6. Spinkle mozzarella cheese on top with a light sprinkling of Old Bay.
  7. Bake at 180C for 30 minutes.
  8. Leave to cool in muffin pan for 10 minutes so that the fish cakes can firm up a bit.
