Ingredients:

  • 1/4 cup chopped onion
  • 1/8 tsp dried basil
  • 1 dash salt and pepper
  • 1 egg
  • 1 tbsp water

Directions:

  1. Coat skillet with cooking spray. Saute onion until tender. Add the tomato, basil, salt, and pepper; cook 1 minute longer.
  2. Whisk egg and water together and add to pan. Cook until egg is set. Remove from heat and sprinkle cheese over all. Let stand until cheese melts.
