Tomato Relish

Ingredients:

  • 2 cups onions
  • 1/2 cup vinegar
  • 3/4 cup sugar
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 pinch cinnamon (optional)
  • 1 pinch spices (optional)

Directions:

  1. Peel and coarsely chop tomatoes.
  2. Slice onions.
  3. Bring all ingredients to a boil, then let simmer on medium to medium low heat for one hour or until reduced and thick. Once cool put into mason jars and store in cool place.
