Ingredients:

Directions:

  1. Pour oil into pan and bring up to temperature over med-low heat.
  2. Add tomatoes and saute until soft.
  3. Add remaining ingredients, except spinach.
  4. Once onion is transparent and majority of liquid is evaporated and the spinach heat through and set aside.
  5. Drain pasta and mix with tomato/genoa mixture.
  6. You can top with Romano or Parmesan Cheese if desired(we used Romano).
