Ingredients:

Directions:

  1. Allow the frozen corn to thaw for about an hour.
  2. In a large skillet, heat the olive oil over medium heat. Add the red onion and garlic, stirring occasionally, and cook for about 3 minutes.
  3. Add in the corn, sun-dried tomatoes, salt, and pepper.
  4. Cook for 4 more minutes.
  5. Pour into a serving bowl and garnish the top with the fresh basil. Serve.
