Ingredients:

Directions:

  1. Preheat oven to 425 degrees F.
  2. Cut baked potatoes in half lengthwise.
  3. Scoop out cooked potato, leaving 1/4-inch shell.
  4. Place potato shells on an ungreased baking sheet.
  5. In a skillet, brown sausage; drain of all fat.
  6. Add salsa to skillet, and cook for 2 minutes, mixing well with meat.
  7. Spoon sausage mixture into shells, and top with nacho cheese sauce.
  8. Bake 10-15 minutes or until heated through.
  9. Serve topped with sour cream, some green onions, and a few ripe olives, if desired.
