Taco Beef and Rice Pie

Ingredients:

Directions:

  1. Taco Pie Crust.
  2. In a sauce pan bring broth, butter and salt to a boil.
  3. Add rice, cover, turn to low and cook for 20 minutes.
  4. Cool rice slightly, add eggs mix well.
  5. Press mixture into a 9 inch greased pie plate, going up sides.
  6. Set aside.
  7. Taco Pie Filling.
  8. Brown ground beef, drain fat.
  9. Stir in garlic, cumin and salt, cook 2 minutes longer.
  10. Remove from heat, stir in taco sauce, egg.
  11. Spoon into prepared rice pie shell.
  12. Bake at 350 degrees for 25 minutes.
  13. Taco Pie Topping.
  14. While pie is cooking, mash avocado together with onion, taco sauce, salt and lemon juice.
  15. When beef pie has cooked the 25 minutes, spread avocado mixture over the top and cook another 5 minutes.
  16. Serve.
  17. *Optional items green chillis, grated cheese.
