Swiss Chard And Virgina Baked Ham Frittata

Ingredients:

Directions:

  1. Heat a 10 oven proof skillet on medium high and melt butter.
  2. Prepare veggies and ham: Very thinly sliced zucchini, match stick red bell peppers, shredded swiss chard, diced ham.
  3. Saute veggies and ham until nicely softened.
  4. Whisk together the egg, cream, shredded cheddar cheese and chives then pour over top of the sauteed veggies. Make sure the veggies and ham are fairly evenly distributed, sprinkle with black pepper.
  5. Reduce heat, cover and let cook until just set. About 5 minutes.
  6. Heat up the broiler on high.
  7. Thinly slice the plum tomato. Arrange the plum tomato on the frittata then sprinkle the tomato with sweet basil and Parmesan.
  8. Put the frittata under the broiler to finish off for about 5 minutes. You will see it puff up a bit and get nicely browned around the edges.
  9. Remove from oven and let sit about 5 minutes to cool before slicing up.
