Sweet Potato Pancakes

Ingredients:

  • 2 tbsp cilantro
  • 1 egg
  • 1/4 cup spelt flour
  • 1/4 tsp salt
  • 1/4 cup olive oil

Directions:

  1. Wash and rinse sweet potato, but do not peel. Grate over a large plate. Add grated onion and cilantro. Mix in egg and flour until will incorporated, then add salt. The mixture will become loose, but will form patties. In a large skillet, heat oil and carefully fry pancakes. 4-5 minutes on each side. Keep warm in a 250 degree oven until ready to serve up to 1 hour. Makes 6 large dinner pancakes or 15 small appetizer cakes.
