Sweet Potato Biscuits

Ingredients:

  • 1/2 cup sugar
  • 3/4 cup butter (or margarine)
  • 4 cups flour
  • 1 tsp salt

Directions:

  1. In large bowl, mash potatoes, sugar and butter.
  2. In separate bowl combine dry ingredients.
  3. Add dry ingredients to potato mixture mixing well.
  4. Cover, let sit at room temperature at least four hours.
  5. Roll out thick (1 inch) on floured board. (If dough is too sticky, work in more flour).
  6. Cut with biscuit cutter.
  7. Place on lightly greased cookie sheet about 2 inches apart.
  8. Bake in preheated oven at 400°F for 15-20 minutes.
  9. Serve hot with orange butter.
  10. Makes 2 dozen biscuits.
