Sweet Potato Biscuits Tinks Way

Ingredients:

  • 1/2- cup butter.............this was margarine orginally but i changed it i like the butter better .use what you want .............
  • 1/2- cup sugar ...........
  • 1- tsp salt ........
  • 4-1/2 tsp baking powder .........
  • 3 1/2- 4 -cups all purpose flour .....test it out if you need the 4 cups ........
  • cinnamon and sugar.............rolll the raisins in this mixture

Directions:

  1. Boil and peel and mash the sweet potatoes
  2. While hot measure 1 1/2 cups of the mashed potatoes in a large bowl
  3. Add butter, sugar, and salt
  4. Mix well
  5. Sift together the flour and baking powder
  6. Add to the potato mixture
  7. If using the raisins add and mix well
  8. Work with hands to mix and make a soft dough.........adding only necessary flour
  9. Chill dough if you like or roll it out and cut with biscuit cutter or glass amt will depend on size cut ......
  10. Place on greased baking sheet
  11. I like to sprinkle a little cinnamon and sugar on top
  12. Bake at 400 degrees f. .......about 15 - 20 minutes until only lightly golden brown.......
  13. And serve .............yummmm
  14. I love cinnamon with sweet potatoes so i let extra fall in lol
