Sweet Potato Bake (Hyvee)

Ingredients:

  • 3 eggs
  • 2/3 cup soymilk
  • 1/4 cup flour
  • 3/4 cup brown sugar
  • 1 1/2 tsp. pumpkin pie spice

Directions:

  1. Preheat oven to 350°. Boil sweet potatoes about 25 minutes or until tender. Drain well and mash.
  2. Stir in eggs, 1/4 cup butter, soymilk and 1/4 cup brown sugar. Pour into a greased 2-quart baking dish.
  3. Stir together remaining ingredients, including remaining butter. Sprinkle evenly over sweet potatoes. Bake uncovered for 40 minutes or until center is set.
