Stuffed Pork Loin

  1. Prepare stuffing and mashed potatoes per stove top directions. ( I use savory herb stuffing and butter and herb potatoes.
  2. Preheat oven to 350°F.
  3. Slice loin into 2-3 inch pieces, then make a slice in the center for stuffing.
  4. Rub blackened magic on meat, and stuff with stuffing.
  5. Place centered in over sized baking pan.
  6. Drizzle lemon juice over meat trying to avoid stuffing.
  7. Bake for approximately 1 hour or until pork is done.
  8. Add potatoes to each end of pan and sprinkle with shredded cheese.
