Stuffed French Toast With Fresh Berry Topping

Ingredients:

Directions:

  1. Combine berries and granulated sugar in a small bowl.
  2. Combine ricotta cheese and strawberry preserves in another small bowl then mix well.
  3. Combine eggs, evaporated milk, brown sugar and vanilla in shallow pan and mix well.
  4. Spread ricotta preserve mixture evenly over half the bread slices.
  5. Top with remaining slices of bread to form sandwiches.
  6. Heat butter in large nonstick griddle over medium heat.
  7. Dip sandwiches in egg mixture coating both sides.
  8. Cook on each side for 2 minutes.
  9. Sprinkle with powdered sugar then top with berries.
  10. Serve with maple syrup.
