Spinach & Fennel Salad W/ Dijon Vinaigrette

Ingredients:

Directions:

  1. In a small bowl, whisk together oil, vinegar, mustard, garlic and pepper.
  2. Add onions and marinate for 10 minutes.
  3. In a large salad bowl, combine spinach and fennel.
  4. Pour dressing over spinach and toss to combine.
  5. Top with bacon bits.
  6. NOTE: The dressing can be marinated for 24 hours to allow the flavors to develop. Make sure to marinate the onions in the dressing. This will mellow out the strong raw onion flavor and turn onions a brighter color. Pour over salad before serving.
