Spinach and Artichoke Dip

Directions:

  1. Preheat oven to 350 degrees F. Grease a casserole dish with non-stick spray.
  2. Heat the spinach in a microwave on HIGH for 5 minutes and squeeze dry. Drain artichoke hearts. Combine and coarsely chop in a food processor (if available).
  3. Combine all ingredients, saving some pepper jack for the top, in a large bowl. Stir, scrape into a casserole dish and sprinkle with remaining cheese.
  4. Bake for 30 minutes. Transfer to serving dish.
