Spicy Pulled Pork with Cherries

Ingredients:

  • 3 lb pork
  • 1 medium onion, cut into wedges
  • 1/2 cup ketchup
  • 1/3 cup cider vinegar
  • 1/4 cup brown sugar , packed
  • 1 tsp cinnamon
  • 1/2 tsp salt

Directions:

  1. Trim fat from pork and cut into 2 or 3 pieces
  2. Coarsely chop dried cherries
  3. Place pork, onion & cherries into 4-quart or larger crock pot
  4. Mix together ketchup, vinegar, sugar, red pepper, cinnamon, garlic powder and salt
  5. Pour mixture over pork
  6. Cover and cook 8 hours on low heat
  7. Remove pork from cooker and using 2 forks, shred
  8. Return shredded pork to cooker
  9. Mix and heat with sauce before serving
