Ingredients:

Directions:

  1. Skinned pineapple and slice to 1cm thick.
  2. Blend shallots, garlic and ginger into paste.
  3. Heat oil in a wok and saute the shallot, garlic and ginger paste until fragrant.
  4. Add chili paste and stir again until its fully cooked* (about 10-15 minutes, keep stirring )
  5. Add some salt.
  6. When chilli is cooked add half cup water, stir well and add pineapple.Cook under cover for 5 minutes.
  7. Uncover and stir until well mixed. Now add all the remaining ingredients.
  8. Add another half cup water and cover again and leave for another 5 minutes.
  9. Uncover and stir everything until well mixed.
  10. Taste and add sugar/salt if necessary.
  11. Ready to serve!
