Ingredients:

Directions:

  1. Scrub potato and microwave for 2 minutes
  2. In a medium frying pan add 1 tsp olive oil- when warm, add about 1 T butter
  3. After microwaving potato, cube and saute in saucepan with olive oil/butter until brown
  4. Add jalapeno pepper rings, cook for a few minutes then add red onion
  5. A clove of minced garlic is optional here
  6. Thin barbeque sauce with an equal amount of water- start with a scant 1/4 cup each and pour over potato mixture in pan- cook until warm
  7. Serve with a dollop of sour cream atop it to mix in when eating
  8. Cubed ham can also be added to make this a main dish
  9. I think this could be multiplied and served in a large casserole dish with sour cream florets on top- sprinkle with cilantro, small diced tomatoes or bacon bits.
