Spaghetti & Shrimp Cilantro Cream

Ingredients:

Directions:

  1. Prepare Pesto.
  2. Wash cilantro and remove stems.
  3. In blender chop pumpkin seeds.
  4. Add cilantro, garlic, cheese and seasoning.
  5. Slowly add olive oil until blended. (More olive oil may be needed depending on amount of cilantro; pesto should not be runny).
  6. Peel, devein and wash shrimp.
  7. Heat 2 Tbsps of Olive oil in pan.
  8. Place shrimp in pan and cook for about 3 mins or until pink and slightly curled.
  9. Remove shrimp to plate and keep warm.
  10. Deglaze pan with white wine.
  11. Add 3 T of pesto and stir to blend.
  12. Add Cream and mix well.
  13. Return shrimp to pan and heat.
  14. Serve over spaghetti and enjoy the praise.
