Shalima's Yummy Raw Yellow Curry

Ingredients:

  • 1/4 cup walnuts
  • 1/2 cup raisins
  • 1 garlic clove
  • 1/2 tsp salt
  • 1 thumb ginger
  • 1 garlic clove
  • 1/2 cup raisins
  • 3/4 cup cashew nuts
  • 1 cup coconut, threads soaked (include soak water)
  • 1/4 cup dates
  • 1/2 large avocado
  • 1 tbsp tamari
  • 2 tsp turmeric
  • 1 tsp cumin
  • 1 tsp chili
  • 1/2 tsp paprika
  • 1/2 tsp salt

Directions:

  1. Chop cauli finely and set aside in bowl (or pulse - and then squeeze out juice if its a bit watery).
  2. Process next 5 ingredients (walnuts-salt) to a rough paste, then stir evenly into the cauli.
  3. Taste and adjust seasoning if necessary. set aside.
  4. Process all remaining ingredients (tomatoes-pepper) until smooth. taste and adjust - cumin and salt make a big difference to the final flavour so add extra with care :).
  5. Easy peasy serve with cauli rice. bon apetit! :).
