Sesame-Ginger Chicken Quesadillas

Ingredients:

Directions:

  1. Heat Sesame-Ginger Sauce in skillet over medium heat. Add chicken, carrot, and onion. Cook, stirring occasionally, 2-4 min or til thoroughly heated. Spoon on half of each tortilla and sprinkle with cheese. Wipe skillet clean. Cook tortilla side down in lightly greased skillet over medium-high heat 1 min or til browned. Fold tortillas over filling and serve immediately.
  2. Sesame-Ginger Sauce:
  3. /3 cup rice wine vinegar
  4. /2 cup soy sauce
  5. /3 cup canola oil
  6. /3 cup sesame oil
  7. Tbsp honey
  8. Tbsp minced fresh ginger
  9. Garlic clove, minced
  10. Whisk together all ingredients. Store in refrigerator up to 1 week. Can also be used as marinade for roasted chicken!
