Seared Fresh Tuna Salad

Ingredients:

Directions:

  1. Preheat oven to 350.
  2. Wash potatoes and cut into 1” cubes.
  3. Wash and trim beans and cut into 2” pieces.
  4. Place potatoes in steamer over 3” water then cover pot and bring water to a boil.
  5. Steam 5 minutes then add beans and continue steaming another 5 minutes.
  6. While vegetables steam, mix mustard and vinegar in a large bowl until smooth.
  7. Add horseradish and broth then stir with fork to a smooth consistency.
  8. Add salt and pepper then add potatoes and beans when they are cooked and toss well.
  9. Wash tuna and pat dry with paper towels then coat both sides with sesame seeds.
  10. Preheat a medium nonstick skillet on medium high for 2 minutes.
  11. Add olive oil and sear tuna for 2 minutes per side then salt and pepper the cooked side.
  12. Cover and remove from heat then allow to stand 5 minutes.
  13. Divide greens in half and place on plates then spoon potatoes and beans onto lettuce.
  14. Add tomatoes then slice tuna into strips and arrange on top.
  15. Pour remaining dressing over top then serve with baguette.
