Ingredients:

  • 1 lb turkey strips (thin and about an inch long) or 1 lb chicken strips (thin and about an inch long)
  • 2 (8 oz) cans corn
  • 2 (8 oz) stewed tomatoes
  • 2 (8 oz) black beans
  • 1 tsp hot sauce
  • 1 tbsp olive oil
  • 4 oz water
  • salt and pepper

Directions:

  1. Combine corn, tomatoes, beans (do not drain) and 1/2 can of water in pot and bring to boil.
  2. Add rice, cook until tender.
  3. Remove from heat.
  4. Sauté turkey/chicken strips in oil and hot sauce (to taste).
  5. Mix meat with corn, tomatoes, beans, and rice.
  6. Add sour cream.
  7. Salt and pepper to taste.
