Ingredients:

  • 300 g parsley
  • 150 g cilantro
  • 200 g leeks
  • 200 g celery
  • 2 cloves garlic
  • 2 eggs
  • 1 tbsp flour
  • 1 tbsp dried chives
  • 2 tbsp dried mint
  • 2 tbsp cranberries
  • 1/2 tsp baking soda

Directions:

  1. Wash and chop parsley, cilantro, green stalks of leeks, celery and garlic.
  2. Saute them in 1 tbsp oil till they turn dark (not black) and fragrant. then remove from heat.
  3. Preheat oven to 385
  4. Stir in all other ingredients. If you like lots of texture, leave as is. If you like your kuku smooth and uniform like cake, process with hand-held blender.
  5. Add salt and pepper to taste.
  6. Spray 80z aluminium tray with 0 cal oil, pour in mixture and bake covered for 10 and uncovered for another 20 min. Shallow pan is best.
