Roasted Red Potatoes

Ingredients:

  • 4 shallots, quartered , about 1 cup
  • 2 tbsp. olive oil
  • 1 tsp. drie italian seasoning
  • 3/4 tsp. salt
  • 1/4 tsp. pepper

Directions:

  1. Preheat oven to 375F.
  2. In large bowl, toss potatoes with shallots, oil, Italian seasoning, salt and pepper.
  3. Spread in single layer in jellyroll pan.
  4. Roast, stirring occasionally, until potatoes and shallots are tender, 35 minutes.
  5. Transfer to bowl, stir in parsley.
