Ingredients:
2 cups flour
1 cup sugar
4 tsp baking powder
1/2 tsp salt
1 egg
1 cup yogurt
1/4 cup butter, melted
2 tsp vanilla
8 oz rhubarb cut into 1 inch cubes
topping
1/4 brown sugar
1 tbsp flour
1/2 tsp cinnamon
1 tbsp butter
Directions:
1. preheat oven to 350 degrees F.
2. butter and flour a 20 cm square pan
3. sift flour, sugar, baking powder and salt together.
4. beat egg, yogurt, melted butter, and vanilla together.
5. whisk in the flour mixture until just blended [DONT OVERMIX]
6. fold in rhubarb
7. spread batter into cake pan
8. in a bowl combine the brown sugar, flour, and cinnamon. work in the butter with your fingers until crumbly; sprinkle over cake.
9. bake for 45-50 minutes.
