Pumpkin Cream Cheese Muffins

Ingredients:

  • 1 1/2 cups flour
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups canned pumpkin
  • 2/3 cup vegetable oil

Directions:

  1. Preheat oven to 350.
  2. Mix all ingredients (except cream cheese).
  3. Grease muffin tins.
  4. Fill half full with mixuture.
  5. Cut up cream cheese into 12 equal sized chunks. Add one to each muffin.
  6. Fill up tin with remaining mixture.
  7. Bake for 20-25 minutes until toothpick comes out clean.
  8. Let cool for 5 minutes. Makes 12 muffins.
