Ingredients:

  • 3 cups sugar
  • 2 cups flour
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp allspice
  • 1 tsp vanilla
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 eggs
  • 15 oz pumpkin
  • 1 cup oil
  • 1 1/2 cups pecans, chopped

Directions:

  1. Mix together the sugar, pumpkin and oil. Add the eggs, cinnamon, nutmeg, allspice and vanilla.
  2. Sift in flour baking powder, baking soda and salt.
  3. Stir int the pecans.
  4. Bake at 350 degrees for 65-75 minutes in a greased and floured loaf pan.
