Pumpkin Chocolate Chip Muffins

Ingredients:

  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup canola oil
  • 1 3/4 cup pumpkin (small can)
  • 3 cups flour (*opt 1 brown, two white)
  • 1 tsp cinnamon (can add more , nutmeg , cloves)
  • 1 tsp salt
  • 1 cup mini chocolate chipits

Directions:

  1. Beat eggs slightly.
  2. Add sugar, oil, umpkin and beat thoroughlky.
  3. Add dry ingredients and mix until just mixed. Stir in chocolate chips. Use ice cream scoop to measure into non stick muffin pan or into greased tins.
  4. Bake 350* for 15-20 minutes, until toothpic comes out clean. Watch carefully as pumpkin likes to burn.
  5. Remove from tins immediately.
