Pumpkin Bars - Can Be Made Gluten Free

Ingredients:

  • 1 cup flour
  • 2/3 cup sugar
  • 1 1/4 tsp baking powder (gluten free - check - most are ok)
  • 1 tsp cinnamon
  • 1/8 tsp salt
  • 1/2 tsp baking soda
  • 1/8 tsp ground cloves
  • 1 tbsp mayonaise (gluten free - use hellman's)
  • 1 cup pumpkin
  • 3 egg whites slighly beaten
  • 1/4 cup plus 1 tbsp corn oil
  • 1/4 cup water
  • 1/4 cup soft butter
  • 3/4 tsp vanilla

Directions:

  1. Preheat oven 350 F and spray an 8 x12 pan with non - stick spray (gluten free check spray). Sift together the flour mixture, sugar, baking powder, cinnamon, salt, baking soda and cloves.
  2. Stir in the mayonaise, pumpkin, egg whites, corn oil, and water till thoroughly combined.
  3. Spread in the oiled pan. Bake 20 minutes or till a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack.
  4. Cream cheese frosting: combine 1/4 cup butter, cream cheese and vanilla in mixer/blend - slowly and confectioner sugar and mix until well blended.
  5. Spread cream cheese frosting ontop of cooled pumpkin bars.
  6. Refrigerate to keep moist and fresh.
