Carrot and Spice Muffins

Ingredients:

  • 2 cups flour
  • 3/4 cup sugar
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1/2 cup raisins
  • 1/2 cup grated carrot
  • 1/3 cup vegetable oil
  • 1 egg

Directions:

  1. In large bowl combine first 8 ingredients.
  2. In med bowl combine rest of the ingredients.
  3. Add egg mixture to flour mixture.
  4. Stir just until moistened.
  5. Spoon into greased or paper lined muffin pans.
  6. Bake 25 minutes at 375* or until toothpick comes out clean.
  7. Remove from pan.
  8. These are very good served warm.
