Ingredients:

Directions:

  1. Lay out the crostini or crackers on a flat surface.
  2. Thinly slice green parts of the spring onion and set to one side for garnish.
  3. Finely chop the remaining spring onions and 4 of the prawns, then mix into the soft cheese.
  4. Share mixture between the crostini or crackers. ( Do this shortly before serving to avoid soggy crostini).
  5. Sprinkle each one with a few pieces of the reserved spring onion, then place a prawn on top.
  6. Season with a little freshly ground black pepper.
  7. Just before serving, garnish with parsley leaves.
